Summer Harvest Salad

This vibrant and refreshing Summer Harvest Salad combines fresh seasonal vegetables with a zesty lime dressing, perfect for a light and healthy meal.

Ingredients

2 cups of mixed greens
1 cup of cherry tomatoes, halved
1 cup of cucumber, sliced
1/2 cup of sweet corn, cooked
1/4 cup of red onion, thinly sliced
1/2 avocado, diced
1/4 cup of feta cheese, crumbled
1/4 cup of almonds, sliced
2 tbsp of fresh cilantro, chopped
1 lime, juiced
2 tbsp of olive oil
Salt and pepper to taste

Instructions

1. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, sweet corn, red onion, and avocado.
2. In a small bowl, whisk together lime juice, olive oil, salt, and pepper to make the dressing.
3. Pour the dressing over the salad and toss gently to combine.
4. Top with feta cheese, sliced almonds, and fresh cilantro.
5. Serve immediately and enjoy!

Storage

Store any leftover salad in an airtight container in the refrigerator for up to 2 days. For best results, store dressing separately.

Reheating
