Summer Corn & Mango Salsa
A vibrant and refreshing homemade salsa that combines the sweetness of mango with the crispness of corn, making it a perfect appetizer for summer gatherings.

Ingredients
2 ears of corn, grilled and kernels removed
2 ripe mangoes, diced
1 red bell pepper, diced
1/4 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
1 jalapeño, seeded and minced
Juice of 2 limes
Salt to taste
Instructions
1. Grill the corn over medium heat until slightly charred, about 10 minutes.
2. Let the corn cool before cutting the kernels off the cob.
3. In a large bowl, combine the grilled corn kernels, diced mangoes, red bell pepper, red onion, cilantro, and jalapeño.
4. Squeeze the lime juice over the mixture and add salt to taste.
5. Mix everything gently until well combined.
6. Let the salsa sit for at least 15 minutes to allow the flavors to meld.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Allow the salsa to come to room temperature before serving for best flavor.
