Stuffed Chicken Breast with Spinach and Ricotta

Ingredients
4 boneless, skinless chicken breasts
1 tablespoon olive oil
Salt and pepper to taste
1 cup ricotta cheese
1 cup fresh spinach, chopped
1/4 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon nutmeg
1 large egg, beaten
1 tablespoon lemon zest
2 tablespoons fresh parsley, chopped
Instructions
1. Preheat your oven to 375°F (190°C).
2. In a medium bowl, combine ricotta cheese, spinach, Parmesan, garlic powder, nutmeg, egg, lemon zest, and parsley. Mix until well combined.
3. Cut a pocket into the side of each chicken breast, being careful not to cut all the way through.
4. Stuff each chicken breast with the ricotta and spinach mixture, and secure with toothpicks if needed.
5. Heat olive oil in an oven-safe skillet over medium-high heat.
6. Season the chicken breasts with salt and pepper, and sear them in the skillet until golden brown on each side, about 3-4 minutes per side.
7. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
8. Let the chicken rest for a few minutes before slicing and serving.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Preheat oven to 350°F (175°C) and reheat for 10-15 minutes, or until heated through.
