Ingredients
1 cup all-purpose flour
1/2 cup granulated sugar
1/2 cup unsalted butter, softened
1/4 teaspoon salt
1/2 teaspoon vanilla extract
2 cups fresh strawberries, hulled and sliced
2 tablespoons cornstarch
1/4 cup brown sugar
1/2 cup rolled oats
1/4 cup unsalted butter, melted
Instructions
1. Preheat the oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
2. In a bowl, mix flour, granulated sugar, softened butter, salt, and vanilla extract until crumbly. Press the mixture into the prepared baking dish to form the crust.
3. Bake the crust in the preheated oven for 15 minutes.
4. Meanwhile, in a saucepan over medium heat, combine strawberries, cornstarch, and brown sugar. Cook until the mixture thickens, about 5 minutes.
5. Pour the strawberry filling over the baked crust.
6. In a separate bowl, mix oats and melted butter until combined, then sprinkle over the strawberry filling.
7. Bake for an additional 20-25 minutes, or until the topping is golden brown.
8. Allow the bars to cool completely before cutting into squares.
Storage
Store in an airtight container in the refrigerator for up to 5 days.
Reheating
Allow bars to reach room temperature or warm briefly in the microwave for 10-15 seconds.
