Strawberry Delight Cake

Ingredients
1 and 3/4 cups all-purpose flour
1 and 1/2 cups granulated sugar
1/2 cup unsalted butter, softened
2 large eggs
1/2 cup whole milk
2 tsp baking powder
1/4 tsp salt
1 tsp vanilla extract
2 cups fresh strawberries, hulled and chopped
1/2 cup strawberry jam
1 cup heavy cream
1/4 cup powdered sugar
1/2 tsp lemon zest
Instructions
1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
2. In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
3. In a large mixing bowl, cream the butter and granulated sugar until light and fluffy. Add eggs, one at a time, mixing well after each addition.
4. Stir in the vanilla extract. Gradually add the dry ingredients to the wet mixture alternately with the milk, beginning and ending with the flour mixture.
5. Gently fold in the chopped strawberries and lemon zest.
6. Divide the batter evenly between the prepared cake pans and smooth the tops.
7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
8. Let the cakes cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely.
9. For the frosting, whip the heavy cream and powdered sugar together until stiff peaks form. Set aside.
10. Place one cake layer on a serving plate, spread the strawberry jam over it, then add a layer of whipped cream. Place the second cake layer on top and frost the entire cake with the remaining whipped cream.
11. Garnish with additional fresh strawberries if desired.
Storage
Store the cake in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, allow the cake to come to room temperature or serve cold directly from the refrigerator.
