Steamed Mussels in White Wine

Ingredients
3 lbs fresh mussels
1 cup white wine
2 tbsp olive oil
4 cloves garlic, minced
1 shallot, finely chopped
2 tbsp fresh parsley, chopped
1 tbsp fresh thyme leaves
Salt to taste
Black pepper to taste
1 lemon, cut into wedges
Instructions
1. Clean and debeard the mussels under cold running water, discarding any open shells.
2. In a large pot, heat olive oil over medium heat. Add garlic and shallot, sautéing until fragrant.
3. Pour in white wine, bringing to a simmer.
4. Add mussels to the pot, cover with a lid, and steam for 5-7 minutes, or until the mussels open.
5. Discard any mussels that do not open.
6. Sprinkle with fresh parsley, thyme, salt, and pepper.
7. Serve immediately with lemon wedges.
Storage
Store leftover mussels in an airtight container in the refrigerator for up to 2 days.
Reheating
Reheat mussels gently in a pot over low heat until warmed through, adding a splash of water or broth if necessary.
