Spring Asparagus Tart

Ingredients

1 sheet puff pastry (thawed)
1 lb fresh asparagus (trimmed)
1 cup ricotta cheese
1/2 cup grated Parmesan cheese
2 tbsp olive oil
1 clove garlic (minced)
1/2 tsp salt
1/4 tsp black pepper
1 tsp lemon zest
1 egg (beaten)

Instructions

1. Preheat your oven to 400°F (200°C).
2. Roll out the puff pastry onto a baking sheet lined with parchment paper.
3. In a bowl, mix ricotta cheese, Parmesan, garlic, salt, pepper, and lemon zest.
4. Spread the cheese mixture evenly over the puff pastry, leaving a 1-inch border.
5. Arrange the asparagus spears neatly over the cheese layer.
6. Brush the border of the pastry with the beaten egg to create a golden crust.
7. Drizzle olive oil over the asparagus.
8. Bake for 20-25 minutes, until the pastry is golden and the asparagus is tender.
9. Allow to cool slightly before slicing and serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a preheated oven at 350°F (175°C) for 10 minutes, or until warmed through.
