Spinach and Ricotta White Lasagna
A unique twist on the classic lasagna, this white lasagna combines creamy ricotta, tender spinach, and a hint of nutmeg for a comforting Italian meal perfect for weeknight dinners or special occasions.

Ingredients
9 lasagna noodles
1 1/2 cups ricotta cheese
2 cups fresh spinach
1/4 cup grated Parmesan cheese
1 tsp nutmeg
2 cups mozzarella cheese, shredded
2 cups Alfredo sauce
1/2 cup chopped onions
2 cloves garlic, minced
2 tbsp olive oil
1/4 cup fresh basil, chopped
Salt and pepper to taste
Instructions
1. Preheat oven to 375°F.
2. Cook lasagna noodles according to package instructions. Drain and set aside.
3. In a skillet, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
4. Stir in spinach until wilted, then add nutmeg, salt, and pepper. Remove from heat.
5. In a bowl, mix ricotta and Parmesan cheese.
6. Spread a thin layer of Alfredo sauce on the bottom of a 9x13 baking dish.
7. Layer 3 lasagna noodles, half of the spinach mixture, half of the ricotta mixture, and a third of the mozzarella. Repeat layers, ending with a final layer of noodles topped with Alfredo sauce and remaining mozzarella.
8. Cover with foil and bake for 25 minutes. Uncover and bake an additional 10 minutes or until cheese is bubbly and golden.
9. Let cool before serving, garnished with fresh basil.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in an oven preheated to 350°F for 15-20 minutes or until heated through.
