Spicy Zucchini and Corn Fritters

Ingredients

2 medium zucchinis, grated
1 cup corn kernels (fresh or frozen)
1/2 cup all-purpose flour
1/2 cup cornmeal
2 large eggs
1/4 cup chopped green onions
1/4 cup chopped cilantro
2 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1/2 tsp cayenne pepper
1/4 cup grated Parmesan cheese
Olive oil for frying

Instructions

1. Grate the zucchinis and squeeze out excess moisture using a clean kitchen towel.
2. In a large bowl, combine grated zucchini, corn kernels, flour, cornmeal, eggs, green onions, cilantro, garlic, salt, black pepper, cayenne pepper, and Parmesan cheese.
3. Mix well until all ingredients are thoroughly incorporated.
4. Heat olive oil in a large skillet over medium heat.
5. Scoop a heaping tablespoon of batter and flatten it slightly into the skillet.
6. Cook fritters for about 3-4 minutes on each side or until golden brown.
7. Remove from skillet and drain on paper towels.
8. Repeat with remaining batter, adding more oil to skillet as needed.

Storage

Store leftover fritters in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, place fritters on a baking sheet and warm in a 350°F oven for 10 minutes.
