Spicy White Chicken Chili with Roasted Peppers

Ingredients
2 tbsp olive oil
1 large onion, diced
4 cloves garlic, minced
2 lbs chicken breast, diced
2 (15 oz) cans cannellini beans, drained and rinsed
1 (15 oz) can corn kernels, drained
4 cups chicken broth
2 roasted poblano peppers, chopped
1 roasted red bell pepper, chopped
2 tsp ground cumin
1 tsp smoked paprika
1/2 tsp cayenne pepper
Salt and pepper to taste
1/2 cup sour cream
1/2 cup fresh cilantro, chopped
1 lime, cut into wedges for serving
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Sauté onion and garlic until fragrant and translucent, about 5 minutes.
3. Add diced chicken breast and cook until browned on all sides.
4. Stir in cannellini beans, corn, and chicken broth.
5. Add roasted peppers, cumin, smoked paprika, cayenne pepper, salt, and pepper.
6. Bring to a simmer and cook for 20 minutes, stirring occasionally.
7. Remove from heat and stir in sour cream and fresh cilantro.
8. Serve hot with lime wedges.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
