Spicy Vegetarian Ginger Dumplings

Ingredients
2 cups all-purpose flour
1/2 cup warm water
1 tbsp sesame oil
1 tbsp soy sauce
1 tbsp grated fresh ginger
2 cloves minced garlic
1 cup shredded cabbage
1/2 cup grated carrots
1/4 cup chopped green onions
1/2 cup diced firm tofu
1/4 tsp red pepper flakes
1/2 tsp salt
1/4 tsp black pepper
Instructions
1. In a large bowl, mix the flour and warm water until a dough forms. Knead for 8-10 minutes until smooth. Cover and let it rest for 30 minutes.
2. In a pan, heat sesame oil over medium heat. Add garlic and ginger, sauté until fragrant.
3. Stir in cabbage, carrots, and green onions; cook until slightly tender, about 5 minutes.
4. Add diced tofu, soy sauce, red pepper flakes, salt, and black pepper. Cook for another 3 minutes, then let it cool.
5. Roll the dough into a log and cut into 16 equal pieces. Roll each piece into a circle, about 3 inches in diameter.
6. Place a tablespoon of filling in the center of each circle. Fold the dough over the filling, crimping the edges to seal.
7. In a steamer, cook the dumplings over boiling water for 15 minutes or until the dough is cooked through. Serve hot.
Storage
Store cooked dumplings in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, steam the dumplings for 5-7 minutes over boiling water until heated through.
