Ingredients
1 lb chicken breast, diced
1 lb shrimp, peeled and deveined
1 cup andouille sausage, sliced
2 tbsp olive oil
1 large onion, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
3 cloves garlic, minced
1 cup pineapple chunks
2 cups long-grain white rice
4 cups chicken broth
1 can (14 oz) coconut milk
2 tsp Cajun seasoning
1 tsp smoked paprika
1/2 tsp cayenne pepper
Salt and pepper to taste
2 tbsp fresh cilantro, chopped
2 limes, cut into wedges
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add chicken and sausage, cooking until browned.
3. Stir in onion, bell peppers, and garlic; sauté until soft.
4. Mix in pineapple chunks, rice, and spices; coat well.
5. Pour in chicken broth and coconut milk; bring to a boil.
6. Reduce heat, cover, and simmer for 20 minutes.
7. Add shrimp, cook for another 5 minutes until pink.
8. Remove from heat, garnish with cilantro, and serve with lime wedges.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a skillet over medium heat, adding a splash of broth if needed, until thoroughly heated.
