Spicy Sweet Potato Pancakes with Cilantro Yogurt

Ingredients

2 lbs sweet potatoes, peeled and grated
1 cup all-purpose flour
2 large eggs
1/2 cup chopped green onions
1/4 cup chopped cilantro
1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp cayenne pepper
1 tsp salt
1/2 tsp black pepper
1/4 cup vegetable oil
1 cup Greek yogurt
2 tbsp lime juice

Instructions

1. In a large bowl, combine grated sweet potatoes, flour, eggs, green onions, cilantro, cumin, smoked paprika, cayenne pepper, salt, and black pepper. Mix until well combined.
2. Heat vegetable oil in a large skillet over medium heat.
3. Scoop about 1/4 cup of the mixture into the skillet, flattening it with a spatula to form a pancake.
4. Cook for 3-4 minutes on each side, or until golden brown and crispy. Remove and place on a paper towel-lined plate.
5. In a small bowl, mix Greek yogurt and lime juice to create the cilantro yogurt sauce.
6. Serve the pancakes warm, topped with a dollop of cilantro yogurt.

Storage

Store leftover pancakes in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat pancakes in a preheated oven at 350°F for 10 minutes or until heated through.
