Spicy Sweet Potato and Sausage Gumbo

Ingredients
1 lb smoked sausage, sliced
2 tbsp olive oil
1 large onion, chopped
1 cup celery, chopped
1 large green bell pepper, chopped
4 cloves garlic, minced
2 tbsp all-purpose flour
1 tbsp Cajun seasoning
1/2 tsp cayenne pepper
1/2 tsp black pepper
2 cups chicken broth
1 can (14.5 oz) diced tomatoes
2 cups sweet potatoes, peeled and cubed
2 cups okra, sliced
1 bay leaf
Salt to taste
1/4 cup fresh parsley, chopped
Cooked white rice, for serving
Instructions
1. Heat olive oil in a large pot over medium heat. Add the smoked sausage and cook until browned. Remove the sausage and set aside.
2. In the same pot, add onions, celery, and bell pepper. Sauté until softened.
3. Stir in garlic and cook for another minute.
4. Sprinkle flour over the vegetables and stir continuously for 2 minutes.
5. Add Cajun seasoning, cayenne pepper, black pepper, and salt. Cook for another minute.
6. Slowly pour in the chicken broth, stirring constantly to avoid lumps.
7. Add diced tomatoes, sweet potatoes, okra, bay leaf, and cooked sausage. Bring to a boil.
8. Reduce heat and let simmer for 30-40 minutes, until sweet potatoes are tender.
9. Adjust seasoning with salt if necessary and discard the bay leaf.
10. Stir in fresh parsley before serving.
11. Serve hot over a bed of white rice.
Storage
Store the gumbo in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze in a freezer-safe container for up to 3 months.

Reheat gently on the stovetop over medium heat until heated through, or microwave in a microwave-safe dish, stirring occasionally.
