Ingredients
3 cups fresh corn kernels
1 cup diced red bell pepper
1 small jalapeño, seeded and minced
1/4 cup chopped green onions
2 large eggs
1/2 cup sour cream
1 cup shredded pepper jack cheese
1/2 teaspoon ground cumin
1/2 teaspoon smoked paprika
Salt and pepper to taste
2 tablespoons melted butter
1/2 cup crushed tortilla chips
Instructions
1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
2. In a large mixing bowl, combine corn, red bell pepper, jalapeño, and green onions.
3. In another bowl, whisk together eggs and sour cream, then stir into the vegetable mixture.
4. Add in the pepper jack cheese, cumin, smoked paprika, and salt and pepper. Mix until well combined.
5. Pour the mixture into the prepared baking dish, spreading it evenly.
6. Drizzle the melted butter over the top, then sprinkle with crushed tortilla chips.
7. Bake in the preheated oven for 30-35 minutes, or until the casserole is set and the top is golden brown.
8. Allow to cool for a few minutes before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat individual servings in the microwave for 1-2 minutes or until heated through. Alternatively, reheat in the oven at 350°F (175°C) for about 10-15 minutes.
