Ingredients
1 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
1 tsp smoked paprika
1 tsp ground cumin
1/2 tsp cayenne pepper
1 cup dried green lentils
6 cups vegetable broth
1 can (14.5 oz) diced tomatoes
1 red bell pepper, chopped
Salt and pepper to taste
1/4 cup fresh cilantro, chopped (optional)
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add the onion and cook until translucent, about 5 minutes.
3. Stir in garlic, smoked paprika, ground cumin, and cayenne pepper; cook for another 1 minute until fragrant.
4. Add lentils, vegetable broth, diced tomatoes, and red bell pepper.
5. Bring to a boil, then reduce heat to low and simmer for 30-35 minutes or until lentils are tender.
6. Season with salt and pepper to taste and garnish with fresh cilantro before serving.
