Spicy Shrimp and Cheddar Grits

A modern twist on the classic Southern dish, Spicy Shrimp and Cheddar Grits combines succulent shrimp with creamy cheese-infused grits for a hearty, flavorful meal that tantalizes the taste buds.

Ingredients

1 lb shrimp, peeled and deveined
1 cup stone-ground grits
4 cups water
1 cup shredded cheddar cheese
2 tbsp unsalted butter
1 tsp garlic powder
1/2 tsp cayenne pepper
Salt and pepper to taste
2 tbsp olive oil
1/2 cup chopped scallions
1/4 cup chopped fresh parsley
1 lemon, juiced

Instructions

1. Bring water to a boil in a large pot.
2. Stir in the grits and reduce heat to low, simmering for 20 minutes while stirring occasionally.
3. Add cheddar cheese, butter, garlic powder, cayenne pepper, salt, and pepper to the grits. Stir well until cheese is melted and the mixture is creamy.
4. In a skillet, heat olive oil over medium heat and add shrimp.
5. Cook shrimp for 3-4 minutes on each side until they are pink and opaque.
6. Add scallions and parsley to the skillet and toss with shrimp.
7. Squeeze lemon juice over the shrimp mixture and stir well.
8. Serve the shrimp over a bed of cheesy grits and garnish with additional parsley.

Storage

Store any leftover shrimp and grits in an airtight container in the refrigerator for up to 2 days.

Reheating

Reheat in a skillet over medium heat, adding a splash of water or broth to keep the grits creamy.
