Ingredients
3 lbs pork shoulder
2 tbsp olive oil
1 cup freshly squeezed orange juice
1 tbsp orange zest
4 cloves garlic, minced
1 tbsp ground cumin
1 tbsp smoked paprika
1 tsp cayenne pepper
1 tsp black pepper
1 tsp salt
1 onion, sliced
1 jalapeño, sliced
8 oz chicken broth
Instructions
1. Preheat your oven to 325°F (163°C).
2. In a large Dutch oven, heat olive oil over medium-high heat.
3. Sear the pork shoulder until browned on all sides, about 5-7 minutes.
4. Remove the pork and set aside.
5. In the same pot, add onion, jalapeño, and garlic; sauté until soft, about 5 minutes.
6. Return the pork to the pot.
7. Add orange juice, orange zest, chicken broth, cumin, smoked paprika, cayenne pepper, black pepper, and salt.
8. Cover and cook in the oven for 3 hours, or until the pork is tender and shreds easily with a fork.
9. Remove the pork and shred using two forks.
10. Return the shredded pork to the pot and mix well with the juices.
11. Optional: Broil the shredded pork in the oven for 5-10 minutes for crispy edges.
Storage
Store leftover carnitas in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat carnitas in a skillet over medium heat until heated through, or microwave for 2-3 minutes, stirring halfway through.
