Spicy Mushroom & Spinach Lasagna

A tantalizing twist on classic lasagna, this Spicy Mushroom & Spinach Lasagna combines earthy mushrooms and fresh spinach with a spicy kick, perfect for a comforting and hearty meal.

Ingredients

12 lasagna noodles
1 lb portobello mushrooms, sliced
10 oz fresh spinach
3 cups marinara sauce
2 cups ricotta cheese
2 cups mozzarella cheese, shredded
1 cup Parmesan cheese, grated
1 large egg
1 tbsp olive oil
2 cloves garlic, minced
1 tsp red pepper flakes
1 tsp salt
1/2 tsp black pepper

Instructions

1. Preheat your oven to 375°F (190°C).
2. Cook the lasagna noodles according to package instructions; drain and set aside.
3. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute.
4. Add mushrooms, salt, and black pepper to the skillet; cook until mushrooms are tender, about 5-7 minutes.
5. Stir in spinach and red pepper flakes; cook until spinach is wilted.
6. In a mixing bowl, combine ricotta cheese, egg, and 1 cup of Parmesan cheese.
7. In a 9x13 inch baking dish, spread a thin layer of marinara sauce.
8. Layer with 3 noodles, half of the mushroom-spinach mixture, half of the ricotta mixture, and 1 cup of mozzarella cheese.
9. Repeat layers, finishing with remaining noodles, marinara sauce, and mozzarella cheese.
10. Sprinkle remaining Parmesan cheese on top.
11. Cover with aluminum foil and bake in the preheated oven for 25 minutes.
12. Remove foil and bake for another 15 minutes, or until cheese is golden and bubbly.
13. Let stand for 10 minutes before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat individual portions in the microwave for 2-3 minutes or until heated through.
