Spicy Mediterranean Calzone

Ingredients

2 cups all-purpose flour
1 tsp salt
1/2 tsp sugar
1 packet (2 1/4 tsp) active dry yeast
3/4 cup warm water
1 tbsp olive oil
1 cup mozzarella cheese, shredded
1/2 cup feta cheese, crumbled
1/2 cup sun-dried tomatoes, chopped
1/4 cup black olives, sliced
1/2 cup roasted red peppers, chopped
1/4 cup red onion, finely chopped
1 tsp red pepper flakes
1 tsp dried oregano
1 egg, beaten (for egg wash)

Instructions

1. Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
2. In a large bowl, combine flour, salt, and sugar. Dissolve yeast in warm water and let it sit for 5 minutes until foamy. Add water mixture and olive oil to the flour mixture. Knead until a smooth dough forms.
3. Cover the dough and let it rise for about 1 hour or until doubled in size.
4. Punch down the dough and divide it into 4 equal parts. Roll each part into a circle, about 1/4 inch thick.
5. On one half of each dough circle, layer mozzarella, feta, sun-dried tomatoes, olives, roasted red peppers, red onion, red pepper flakes, and oregano.
6. Fold the dough over the filling and crimp the edges with a fork to seal.
7. Brush the top of each calzone with beaten egg.
8. Bake in the preheated oven for 15-20 minutes or until golden brown.
9. Allow calzones to cool slightly before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a preheated oven at 350°F (175°C) for 10 minutes or until heated through.
