Spicy Lentil Soup

Ingredients
2 tbsp olive oil
1 large onion, diced
2 cloves garlic, minced
1 inch ginger, grated
1 tsp cumin seeds
1 tsp ground coriander
1 tsp smoked paprika
1/2 tsp cayenne pepper
1 1/2 cups red lentils, rinsed
6 cups vegetable broth
1 can (14 oz) diced tomatoes
2 carrots, diced
2 celery stalks, diced
Salt and pepper to taste
Juice of 1 lemon
Chopped cilantro for garnish
Instructions
1. Heat olive oil in a large pot over medium heat. Add onion, garlic, and ginger; sauté until onion is translucent.
2. Stir in cumin seeds, ground coriander, smoked paprika, and cayenne pepper; cook for another minute until fragrant.
3. Add lentils, vegetable broth, diced tomatoes, carrots, and celery. Bring to a boil, then reduce heat and let simmer for 25-30 minutes, until lentils are tender.
4. Season with salt and pepper. Stir in lemon juice just before serving.
5. Garnish with chopped cilantro and serve warm.
Storage
Allow to cool completely, then store in an airtight container in the refrigerator for up to 5 days.
Reheating
Reheat gently on the stove over medium heat until warmed through, adding a little water or broth if too thick.
