Spicy Lemongrass Wonton Soup

Ingredients

1 lb ground chicken
1 tbsp soy sauce
1 tsp sesame oil
1 tsp ginger, minced
1/2 tsp white pepper
1/4 cup scallions, chopped
30 wonton wrappers
6 cups chicken broth
2 stalks lemongrass, smashed and cut into 2-inch pieces
2 tbsp fish sauce
1 tbsp lime juice
1 tbsp chili paste
1 cup baby bok choy, chopped
1 cup shiitake mushrooms, sliced
1/4 cup cilantro, chopped
3 cloves garlic, minced
1 tbsp vegetable oil
1/2 tsp salt

Instructions

1. In a mixing bowl, combine ground chicken, soy sauce, sesame oil, ginger, white pepper, and scallions. Mix well.
2. Place a teaspoon of filling in the center of each wonton wrapper, moisten edges with water, and fold to seal.
3. In a large pot, heat vegetable oil over medium heat. Sauté garlic and lemongrass until fragrant.
4. Add chicken broth, fish sauce, lime juice, chili paste, and salt. Bring to a boil.
5. Add wontons to the boiling broth and cook for 5 minutes.
6. Add bok choy and mushrooms, simmer for another 3 minutes.
7. Ladle soup into bowls, garnish with cilantro.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently on the stove over low heat until warmed through.
