Spicy Lemon Chicken Cacciatore

Ingredients

4 boneless skinless chicken thighs
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
1 medium onion, sliced
2 cloves garlic, minced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1/2 teaspoon red pepper flakes
1 cup cherry tomatoes, halved
1/2 cup black olives, pitted and sliced
1/4 cup capers, drained
1/2 cup white wine
1 cup chicken broth
Juice and zest of 1 lemon
2 tablespoons fresh parsley, chopped

Instructions

1. Season chicken thighs with salt and pepper.
2. In a large skillet, heat olive oil over medium-high heat.
3. Brown chicken thighs on both sides for about 5 minutes. Remove and set aside.
4. In the same skillet, add onion slices and sauté until translucent.
5. Add garlic, red pepper flakes, and sliced bell peppers. Cook for 3 minutes until peppers are slightly softened.
6. Stir in cherry tomatoes, olives, and capers. Cook for 2 minutes.
7. Pour in white wine, scraping any bits from the bottom of the skillet.
8. Add chicken broth, lemon juice, and zest.
9. Return chicken thighs to the skillet. Simmer covered for 25 minutes until chicken is cooked through.
10. Garnish with parsley before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a skillet over medium heat until warmed through, about 10 minutes.
