Spicy Kale and Chickpea Stir-Fry

Ingredients

2 tbsp olive oil
3 cloves garlic, minced
1 large onion, sliced
1 tsp red pepper flakes
1 can (15 oz) chickpeas, drained and rinsed
4 cups kale, chopped
1 tbsp soy sauce
1 tsp lemon juice
Salt and pepper to taste

Instructions

1. Heat olive oil in a large pan over medium heat.
2. Add garlic, onion, and red pepper flakes, sauté until onions are soft.
3. Mix in chickpeas, stir for 3-4 minutes until lightly golden.
4. Incorporate kale, stirring until wilted.
5. Add soy sauce and lemon juice, stir and cook for an additional 3 minutes.
6. Season with salt and pepper to taste, then serve hot.

Storage

Store any leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a pan over medium heat until warmed through, or microwave on high for 1-2 minutes.
