Spicy Jalapeño Bacon Macaroni and Cheese

Ingredients

8 oz elbow macaroni
4 slices bacon, chopped
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 cups whole milk
1 cup sharp cheddar cheese, shredded
1 cup Monterey Jack cheese, shredded
1/2 cup cream cheese
2 jalapeños, seeded and diced
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
1/2 cup breadcrumbs
1 tablespoon olive oil
2 tablespoons chopped fresh parsley

Instructions

1. Preheat oven to 350°F (175°C).
2. Cook macaroni according to package instructions; drain and set aside.
3. In a skillet, cook bacon over medium heat until crispy; remove and set aside.
4. In a large saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute.
5. Gradually whisk in milk, cooking until thickened.
6. Stir in cheddar, Monterey Jack, and cream cheese until melted and smooth.
7. Add jalapeños, garlic powder, onion powder, salt, and pepper; mix well.
8. Combine cooked macaroni and cheese sauce; stir to coat.
9. Transfer to a greased baking dish.
10. In a small bowl, mix breadcrumbs with olive oil; sprinkle over macaroni.
11. Bake in preheated oven for 20 minutes, or until golden brown.
12. Garnish with bacon and parsley before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in the oven at 350°F for 15 minutes or until heated through.
