Spicy Honey Peanut Brittle

Ingredients

1 cup granulated sugar
1/2 cup light corn syrup
1/4 cup water
1/4 cup honey
1/4 tsp salt
1/2 tsp cayenne pepper
2 cups roasted peanuts
1 tbsp unsalted butter
1 tsp vanilla extract
1 tsp baking soda

Instructions

1. Line a baking sheet with parchment paper and set aside.
2. In a large saucepan, combine sugar, corn syrup, water, honey, and salt. Bring to a boil over medium heat, stirring until sugar dissolves.
3. Add cayenne pepper and continue to cook without stirring until the mixture reaches 300°F on a candy thermometer.
4. Remove from heat and quickly stir in peanuts, butter, and vanilla extract.
5. Add baking soda and stir until the mixture is foamy.
6. Pour onto the prepared baking sheet and spread evenly.
7. Allow to cool completely, then break into pieces.

Storage

Store in an airtight container at room temperature for up to 2 weeks.

Reheating

Reheat brittle slightly in a microwave for a few seconds to restore crispness, if desired.
