Ingredients
2 cups granulated sugar
1 cup honey
1/2 cup water
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
3 cups whole almonds
1 tablespoon butter
1 teaspoon vanilla extract
1 teaspoon baking soda
Instructions
1. Line a baking sheet with parchment paper and set aside.
2. In a large saucepan, combine granulated sugar, honey, water, salt, and cayenne pepper. Stir over medium heat until fully dissolved.
3. Increase heat to medium-high and bring the mixture to a boil. Stir occasionally until it reaches 300°F on a candy thermometer (hard crack stage).
4. Remove from heat and quickly stir in almonds, butter, vanilla extract, and baking soda until well combined.
5. Immediately pour the mixture onto the prepared baking sheet. Spread evenly using a spatula.
6. Allow the brittle to cool completely, about 30 minutes.
7. Break the brittle into pieces and store in an airtight container.
Storage
Store in an airtight container at room temperature for up to 2 weeks.
Reheating
For a warm treat, place pieces of brittle on a baking sheet and warm in a 200°F oven for 5 minutes.
