Ingredients

4 ears of corn, husked
1/2 cup unsalted butter, softened
2 tbsp fresh cilantro, chopped
2 tbsp fresh parsley, chopped
2 cloves garlic, minced
1 tsp chili powder
1/2 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
1 lime, cut into wedges

Instructions

1. Preheat oven to 425°F (220°C).
2. In a small bowl, combine softened butter, chopped cilantro, parsley, minced garlic, chili powder, smoked paprika, salt, and black pepper. Mix until well blended.
3. Spread the herb butter mixture evenly over each ear of corn.
4. Wrap each ear of corn tightly in aluminum foil.
5. Place the wrapped corn on a baking sheet and roast in the preheated oven for 25 minutes, turning occasionally.
6. Remove from the oven, carefully unwrap, and serve with lime wedges.
