Ingredients
1 medium head cauliflower (about 2 lbs), cut into florets
3 tbsp olive oil
2 tbsp harissa paste
1 tsp smoked paprika
1/2 tsp ground cumin
1/2 tsp salt
1/4 tsp black pepper
2 cloves garlic, minced
1 tbsp lemon juice
2 tbsp fresh parsley, chopped
Instructions
1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. In a large bowl, combine olive oil, harissa paste, smoked paprika, cumin, salt, pepper, and minced garlic.
3. Add cauliflower florets to the bowl and toss until they are well-coated with the spice mixture.
4. Spread the cauliflower evenly on the prepared baking sheet.
5. Roast in the preheated oven for 25-30 minutes, or until the cauliflower is tender and the edges are caramelized.
6. Remove from the oven and drizzle with lemon juice and sprinkle with fresh parsley before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a preheated oven at 350°F (175°C) for 10-15 minutes until heated through.
