Ingredients
4 cups fresh corn kernels
1 tablespoon unsalted butter
1/2 cup heavy cream
1/4 cup whole milk
2 tablespoons cream cheese
1 tablespoon all-purpose flour
1 tablespoon chopped chipotle peppers in adobo
1 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons chopped fresh cilantro
Instructions
1. Melt butter in a large skillet over medium heat.
2. Add corn kernels and sauté for 5 minutes until bright yellow and tender.
3. In a bowl, whisk together cream, milk, and flour until smooth.
4. Add the cream mixture to the skillet and stir continuously.
5. Add cream cheese, chipotle peppers, smoked paprika, salt, and pepper.
6. Stir until the mixture thickens and the cheese is melted, about 3-4 minutes.
7. Remove from heat and garnish with chopped cilantro before serving.
Storage
Store leftover creamed corn in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a skillet over medium heat, adding a splash of milk if necessary to reach desired consistency.
