Spicy Chipotle Chili Delight

Ingredients
2 lbs ground beef
1 large onion, chopped
3 cloves garlic, minced
2 tbsp olive oil
1 can (14.5 oz) diced tomatoes
1 can (6 oz) tomato paste
1 can (7 oz) chipotle peppers in adobo sauce, chopped
2 cans (15 oz each) kidney beans, drained and rinsed
1 can (15 oz) black beans, drained and rinsed
2 cups beef broth
1 tbsp ground cumin
2 tsp chili powder
1 tsp smoked paprika
1/2 tsp salt
1/2 tsp ground black pepper
1/4 cup fresh cilantro, chopped
Instructions
1. Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, cooking until soft.
2. Add the ground beef to the pot, cooking until browned.
3. Stir in the diced tomatoes, tomato paste, and chipotle peppers.
4. Incorporate the kidney beans, black beans, and beef broth into the mixture.
5. Season with cumin, chili powder, smoked paprika, salt, and black pepper.
6. Reduce the heat to low and let simmer for 45 minutes, stirring occasionally.
7. Garnish with fresh cilantro before serving.
Storage
Let the chili cool to room temperature. Store in an airtight container in the refrigerator for up to 4 days.
Reheating
Reheat in a saucepan over medium heat, stirring occasionally until heated through. Alternatively, microwave on high for 2-3 minutes.
