Spicy Chipotle Beef Casserole

Ingredients
1 lb ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 can (15 oz) black beans, drained and rinsed
1 can (14.5 oz) diced tomatoes with green chilies
1 cup frozen corn kernels
1 cup shredded cheddar cheese
1/4 cup chipotle peppers in adobo sauce, chopped
2 tsp ground cumin
1 tsp smoked paprika
Salt and pepper to taste
8 corn tortillas, cut into strips
1/4 cup chopped fresh cilantro
Instructions
1. Preheat your oven to 375°F (190°C).
2. In a large skillet over medium heat, brown the ground beef, then add the onion and garlic, cooking until the onion is translucent.
3. Stir in the black beans, diced tomatoes with green chilies, corn, chipotle peppers, cumin, smoked paprika, salt, and pepper. Simmer for 5 minutes.
4. Layer half of the tortilla strips at the bottom of a greased 9x13-inch baking dish.
5. Spread half of the beef mixture over the tortillas, sprinkle with half of the cheese, then repeat the layers.
6. Bake uncovered for 20 minutes or until the cheese is bubbly and golden.
7. Garnish with fresh cilantro before serving.
Storage
Store cooled casserole in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat individual portions in the microwave for 2-3 minutes or until heated through.
