Spicy Chili Con Carne

Ingredients

1 lb ground beef
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) black beans, drained and rinsed
1 can (28 oz) diced tomatoes
1 large onion, chopped
3 cloves garlic, minced
1 red bell pepper, chopped
1 jalapeño pepper, seeded and minced
2 tbsp chili powder
1 tsp cumin
1 tsp smoked paprika
1/2 tsp cayenne pepper
Salt and pepper to taste
2 tbsp olive oil
1 cup beef broth

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion, garlic, red bell pepper, and jalapeño; sauté until softened.
3. Add ground beef and cook until browned.
4. Stir in chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper.
5. Add diced tomatoes, beef broth, kidney beans, and black beans.
6. Bring to a boil, then reduce heat and simmer for 30 minutes, stirring occasionally.
7. Adjust seasoning to taste before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a pot over medium heat until warmed through, or microwave in a microwave-safe dish for 2-3 minutes, stirring halfway.
