Ingredients

2 tbsp olive oil
1 large onion, diced
4 cloves garlic, minced
1 tbsp fresh ginger, grated
2 tsp ground cumin
1 tsp ground coriander
1 tsp ground turmeric
1/2 tsp cayenne pepper
1 tsp garam masala
2 cans (15 oz each) chickpeas, drained and rinsed
1 can (14 oz) crushed tomatoes
1 cup vegetable broth
Salt, to taste
Freshly ground black pepper, to taste
1/4 cup fresh cilantro, chopped
Juice of 1 lime

Instructions

1. Heat olive oil in a large pan over medium heat.
2. Add diced onion, sauté until translucent.
3. Stir in minced garlic and grated ginger, cook for an additional 1-2 minutes.
4. Add cumin, coriander, turmeric, cayenne pepper, and garam masala; stir for 30 seconds until fragrant.
5. Mix in drained chickpeas, crushed tomatoes, and vegetable broth.
6. Season with salt and pepper, bring to a simmer.
7. Reduce heat to low, cover, and let simmer for 20 minutes, stirring occasionally.
8. Remove from heat, stir in fresh cilantro and lime juice.
9. Serve hot over cooked rice.

Storage

Store leftover curry in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a pan over medium heat until warmed through, adding a splash of water if necessary.
