Ingredients
1 cup all-purpose flour
1/2 cup cornmeal
1 tsp baking powder
1/2 tsp salt
1/4 tsp black pepper
2 large eggs
1/2 cup milk
1 1/2 cups fresh corn kernels
1 cup shredded sharp cheddar cheese
1/4 cup finely chopped jalapeño pepper
2 tbsp chopped fresh chives
Vegetable oil for frying
Instructions
1. In a large bowl, whisk together the flour, cornmeal, baking powder, salt, and black pepper.
2. In a separate bowl, beat the eggs and then mix in the milk.
3. Add the wet ingredients to the dry ingredients and stir until just combined.
4. Fold in the corn kernels, cheddar cheese, jalapeño, and chives.
5. Heat vegetable oil in a large skillet over medium heat.
6. Using a spoon, drop batter into the skillet, flattening slightly with the back of the spoon.
7. Cook for 3-4 minutes on each side, or until golden brown and crisp.
8. Transfer to a paper towel-lined plate to drain any excess oil.
Storage
Store cooled fritters in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, place fritters on a baking sheet and warm in a 350°F oven for 10 minutes or until heated through.
