Spicy Caribbean Beef Stew

A flavorful and spicy Caribbean-style beef stew with tender chunks of beef, vibrant root vegetables, and a rich, aromatic broth.

Ingredients

2 lbs beef chuck, cut into 1-inch pieces
2 tbsp olive oil
1 large onion, chopped
2 cloves garlic, minced
2 carrots, sliced
2 potatoes, diced
1 sweet potato, diced
1 red bell pepper, chopped
2 cups beef broth
1 cup coconut milk
1 tbsp tomato paste
2 tsp ground allspice
1 tsp dried thyme
1/2 tsp cayenne pepper
Salt and pepper to taste
2 tbsp fresh parsley, chopped

Instructions

1. Heat the olive oil in a large pot over medium heat. Add the beef and brown on all sides.
2. Remove the beef and set aside. In the same pot, add onion and garlic; sauté until softened.
3. Add carrots, potatoes, sweet potato, and bell pepper to the pot and sauté for 5 minutes.
4. Stir in the tomato paste, allspice, thyme, cayenne pepper, salt, and pepper.
5. Return the beef to the pot and pour in beef broth and coconut milk. Bring to a boil.
6. Reduce heat, cover, and simmer for 1.5 hours until beef is tender.
7. Adjust seasoning if necessary and garnish with fresh parsley before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat on the stove over low heat until warmed through, or microwave on medium power.
