Spicy Cabbage Detox Soup

Ingredients

1 tbsp olive oil
1 large onion, chopped
2 cloves garlic, minced
1 large carrot, sliced
1 red bell pepper, chopped
1/2 head of cabbage, chopped
1 can (14.5 oz) diced tomatoes
4 cups vegetable broth
1 tsp cumin
1/2 tsp cayenne pepper
Salt and pepper to taste
1 cup broccoli florets
1 zucchini, sliced
1/2 cup chopped parsley
Juice of 1 lemon

Instructions

1. Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until translucent.
2. Add carrot and bell pepper, cook for an additional 3 minutes.
3. Stir in cabbage, tomatoes, and broth. Bring to a boil.
4. Season with cumin, cayenne pepper, salt, and pepper. Reduce heat and simmer for 15 minutes.
5. Add broccoli and zucchini, continue to simmer for another 10 minutes or until vegetables are tender.
6. Stir in parsley and lemon juice before serving.

Storage

Store in an airtight container in the refrigerator for up to 5 days.

Reheating

Reheat on the stove over medium heat until hot, or microwave in a microwave-safe container for 2-3 minutes.
