Spicy Bayou Seafood Gumbo

Ingredients
1/2 cup all-purpose flour
1/2 cup vegetable oil
1 large onion, chopped
1 green bell pepper, chopped
2 stalks celery, chopped
3 cloves garlic, minced
1 lb shrimp, peeled and deveined
1 lb crab meat
1 lb Andouille sausage, sliced
1 cup okra, sliced
1 can (14.5 oz) diced tomatoes
4 cups seafood stock
2 bay leaves
1 tsp dried thyme
1 tsp cayenne pepper
1/2 tsp black pepper
Salt to taste
1/4 cup fresh parsley, chopped
1/4 cup green onions, sliced
Cooked white rice, for serving
Instructions
1. In a large pot, heat vegetable oil over medium heat and whisk in flour to make a roux.
2. Stir the roux constantly until it reaches a dark brown color.
3. Add onion, bell pepper, celery, and garlic to the roux and sauté until vegetables are tender.
4. Stir in the sliced sausage and cook for another 3 minutes.
5. Add the okra, tomatoes, seafood stock, bay leaves, thyme, cayenne pepper, and black pepper. Bring to a boil.
6. Reduce heat and simmer for 30 minutes.
7. Add the shrimp and crab meat, and simmer for another 10 minutes until the seafood is cooked through.
8. Remove from heat, stir in fresh parsley and green onions.
9. Serve hot over cooked white rice.
Storage
Refrigerate in an airtight container for up to 3 days.
Reheating
Reheat on the stovetop over medium heat until warmed through, stirring occasionally.
