Spicy Avocado Omelette

Ingredients
3 large eggs
1/4 cup milk
1/2 avocado, cubed
1 small jalapeño, deseeded and finely chopped
1/4 cup sharp cheddar cheese, shredded
1 tbsp butter
Salt to taste
Black pepper to taste
1 tbsp fresh cilantro, chopped
Instructions
1. Crack the eggs into a bowl and whisk together with milk, salt, and black pepper.
2. Melt butter in a non-stick pan over medium heat.
3. Pour the egg mixture into the pan, swirling to coat the bottom evenly.
4. Cook until the edges start to set, about 2 minutes, then sprinkle avocado, jalapeño, and cheddar cheese over half of the omelette.
5. Use a spatula to fold the omelette in half, covering the filling.
6. Cook for an additional 2-3 minutes until the cheese is melted and the eggs are fully cooked.
7. Slide the omelette onto a plate and garnish with fresh cilantro.
Storage
Store any leftovers in an airtight container in the refrigerator for up to 2 days.
Reheating
Reheat in the microwave on medium power for 1-2 minutes until warmed through.
