Spicy Avocado and Black Bean Tacos

Add a twist to taco night with these spicy avocado and black bean tacos. The creamy avocado complements the hearty beans and spicy kick, making it a delicious and nutritious meal option.

Ingredients

1 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
1 jalapeño, seeded and diced
1 tsp ground cumin
1 tsp paprika
1/2 tsp chili powder
1 can (15 oz) black beans, drained and rinsed
1/4 cup water
Salt and pepper to taste
2 ripe avocados, peeled and sliced
Juice of 1 lime
1/4 cup fresh cilantro, chopped
8 small corn tortillas
1/2 cup crumbled cotija cheese (optional)
1/2 cup sliced radishes
1/4 cup diced red onion
1/2 cup salsa
Lime wedges for serving

Instructions

1. Heat olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté until the onion is translucent, about 5 minutes.
2. Add the jalapeño, cumin, paprika, and chili powder to the skillet. Cook for another 2 minutes until the spices are fragrant.
3. Stir in the black beans and water, and season with salt and pepper. Cook until the beans are heated through and the mixture thickens, about 5 minutes.
4. In a small bowl, toss the avocado slices with lime juice and cilantro.
5. Warm the corn tortillas in a dry skillet or microwave.
6. Assemble the tacos by placing a spoonful of the black bean mixture onto each tortilla, followed by avocado slices, cotija cheese, radishes, and red onion.
7. Top with salsa and serve with lime wedges on the side.

Storage

Store leftover black bean mixture in an airtight container in the refrigerator for up to 3 days. Keep avocados separate to prevent browning.

Reheating

To reheat, warm the black bean mixture in a skillet over medium heat until heated through, or microwave in a microwavable dish for 1-2 minutes. Warm tortillas in a dry skillet or microwave before serving.
