Ingredients

1 tablespoon sesame oil
1 large onion, sliced
2 cloves garlic, minced

1 medium green cabbage, shredded
8 cups vegetable broth
2 tablespoons soy sauce
1 tablespoon chili paste
1 teaspoon sesame seeds
1 cup sliced mushrooms
1 cup shredded carrots
2 green onions, chopped
Salt and pepper to taste
1 lime, cut into wedges for serving
Fresh cilantro for garnish

Instructions

1. Heat sesame oil in a large pot over medium heat.
2. Add sliced onion, minced garlic, and grated ginger. Sauté for 3-4 minutes until onion is translucent.
3. Add shredded cabbage, vegetable broth, soy sauce, and chili paste. Stir to combine.
4. Bring the mixture to a boil, then reduce heat and simmer for 15 minutes.
5. Add sesame seeds, sliced mushrooms, and shredded carrots. Cook for an additional 10 minutes.
6. Season with salt and pepper to taste.
7. Serve hot, garnished with chopped green onions, cilantro, and a squeeze of lime.

Storage

Allow the soup to cool to room temperature before transferring it to an airtight container. Store in the refrigerator for up to 5 days.
