Spiced Zucchini Walnut Bread

Ingredients
2 cups all-purpose flour
1 cup granulated sugar
1/2 cup brown sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground cloves
1/2 cup unsalted butter, melted
2 large eggs
1 tsp vanilla extract
2 cups grated zucchini
1 cup chopped walnuts
Instructions
1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
2. In a large bowl, combine the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
3. In another bowl, whisk together the melted butter, eggs, and vanilla extract until well combined.
4. Add the wet ingredients to the dry ingredients and stir until just combined.
5. Fold in the grated zucchini and chopped walnuts until evenly distributed.
6. Pour the batter into the prepared loaf pan and smooth the top.
7. Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
8. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Storage
Store in an airtight container at room temperature for up to 4 days or refrigerate for up to 1 week.
Reheating
To reheat, slice the bread and warm in a toaster or microwave for 10-15 seconds.
