Ingredients
1 cup granulated sugar
1/2 cup packed brown sugar
1 cup canned pumpkin puree
1/2 cup vegetable oil
1/4 cup milk
2 large eggs
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 cup chopped walnuts
1/4 cup raisins (optional)
Instructions
1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
2. In a large bowl, whisk together the granulated sugar, brown sugar, pumpkin puree, vegetable oil, milk, eggs, and vanilla extract until smooth.
3. In another bowl, sift together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
5. Fold in the chopped walnuts and raisins, if using.
6. Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.
7. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
8. Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Storage
Store muffins in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
Reheating
To reheat, warm muffins in a microwave for 15-20 seconds or in a preheated 300°F (150°C) oven for 5-7 minutes.
