Ingredients

1 cup canned pumpkin puree
1 cup granulated sugar
1/2 cup light brown sugar, packed
1/2 cup unsalted butter, melted
2 large eggs
1 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground ginger
1/4 tsp ground cloves
1 cup walnuts, chopped
1/2 cup cream cheese
1/4 cup powdered sugar
1/2 tsp vanilla extract

Instructions

1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
2. In a large bowl, combine the pumpkin puree, granulated sugar, brown sugar, melted butter, and eggs, mixing until smooth.
3. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
5. Fold in the chopped walnuts.
6. Pour the batter into the prepared baking pan and spread evenly.
7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
8. While the bars are baking, prepare the cream cheese frosting by beating together the cream cheese, powdered sugar, and vanilla extract until smooth.
9. Allow the bars to cool completely before spreading the frosting evenly over the top.
10. Cut into squares and serve.

Storage

Store in an airtight container in the refrigerator for up to 5 days.

Reheating

Allow bars to come to room temperature or warm in the microwave for 15-20 seconds.
