Ingredients
1 9-inch pie crust (store-bought or homemade)
1 can (15 oz) pumpkin puree
3/4 cup brown sugar
1/2 cup heavy cream
1/4 cup spiced rum
2 large eggs
1 tsp vanilla extract
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground nutmeg
1/4 tsp ground cloves
1/4 tsp salt
Whipped cream, for serving
Instructions
1. Preheat your oven to 375°F (190°C).
2. In a large bowl, combine the pumpkin puree, brown sugar, heavy cream, spiced rum, eggs, vanilla extract, cinnamon, ginger, nutmeg, cloves, and salt. Whisk until the mixture is smooth and well-blended.
3. Pour the pumpkin filling into the prepared pie crust.
4. Place the pie on a baking sheet and bake in the preheated oven for 50-60 minutes, or until the filling is set and a knife inserted near the center comes out clean.
5. Let the pie cool on a wire rack for at least 2 hours before serving.
6. Serve with a dollop of whipped cream on top.
Storage
Store any leftover pie in the refrigerator, covered, for up to 4 days.
Reheating
To reheat, place a slice of pie in the microwave for 20-30 seconds until warm or in a preheated oven at 300°F (150°C) for 10 minutes.
