Ingredients

1 cup canned pumpkin puree
1 3/4 cups all-purpose flour
1 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup unsalted butter, melted
2 large eggs
1 tsp vanilla extract
1/2 cup buttermilk
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground cloves
1 cup pecans, chopped

Instructions

1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
3. In another bowl, mix the pumpkin puree, melted butter, eggs, vanilla extract, and buttermilk until well combined.
4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
5. Fold in the chopped pecans.
6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
7. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
8. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Storage

Store the pumpkin pecan bread in an airtight container at room temperature for up to 3 days, or refrigerate for up to 7 days for longer shelf life.
