Spiced Pineapple Chicken Adobo

A unique twist on the classic Filipino Chicken Adobo, this recipe incorporates the sweet tang of pineapple and a hint of warm spices to create a lip-smackingly delicious main dish that is perfect for both family dinners and special occasions.

Ingredients

2 lbs chicken thighs
1 cup pineapple juice
1/4 cup soy sauce
1/4 cup apple cider vinegar
3 cloves garlic, minced
1 onion, sliced
1 small pineapple, peeled, cored, and sliced
2 bay leaves
1 tsp black peppercorns
1/2 tsp smoked paprika
1 tbsp brown sugar
1 tbsp vegetable oil
Salt to taste

Instructions

1. In a large container, combine pineapple juice, soy sauce, apple cider vinegar, minced garlic, and smoked paprika. Add chicken thighs to the marinade, cover, and refrigerate for at least 2 hours.
2. Heat vegetable oil in a large pan over medium heat. Add the marinated chicken, cooking each side until browned.
3. Add onion slices and saute until translucent. Pour in the remaining marinade along with pineapple slices, bay leaves, black peppercorns, and brown sugar.
4. Bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes or until the chicken is fully cooked and tender.
5. Remove the bay leaves and adjust seasoning with salt if needed.
6. Serve hot with steamed rice.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a saucepan over low heat until warmed through, or microwave until hot.
