Ingredients
4 medium sweet potatoes (about 2 lbs)
1/3 cup maple syrup
1/4 cup unsalted butter, melted
1 tsp vanilla extract
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground ginger
1/4 cup milk
1/2 tsp salt
1/4 tsp black pepper
1 cup pecan halves
1/4 cup brown sugar
2 tbsp all-purpose flour
Instructions
1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
2. Peel and cube the sweet potatoes. Boil in a large pot of water until fork-tender, about 15 minutes, then drain.
3. Mash the sweet potatoes in a large bowl. Add maple syrup, melted butter, vanilla extract, cinnamon, nutmeg, ginger, milk, salt, and pepper. Mix well.
4. Spread the sweet potato mixture evenly in the prepared baking dish.
5. In a separate bowl, combine pecans, brown sugar, and flour. Sprinkle over the sweet potato mixture.
6. Bake in the preheated oven for 25-30 minutes, until the topping is golden brown.
7. Allow to cool slightly before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 4 days.
Reheating
Preheat the oven to 300°F (150°C) and reheat the casserole for 15-20 minutes until warmed through.
