Ingredients
1 large head of cauliflower, cut into florets
2 tbsp olive oil
2 tbsp pure maple syrup
1 tsp ground cumin
1/2 tsp ground cinnamon
1/4 tsp cayenne pepper
1 tsp salt
1/2 tsp black pepper
1/4 cup chopped fresh parsley
2 tbsp toasted pine nuts
Instructions
1. Preheat your oven to 425°F (220°C).
2. In a large mixing bowl, whisk together the olive oil, maple syrup, ground cumin, ground cinnamon, cayenne pepper, salt, and black pepper.
3. Add the cauliflower florets to the bowl and toss until they are well-coated with the mixture.
4. Spread the cauliflower evenly on a baking sheet lined with parchment paper.
5. Roast in the preheated oven for 25-30 minutes, or until the cauliflower is golden brown and tender, stirring halfway through.
6. Remove the cauliflower from the oven and transfer to a serving dish.
7. Garnish with chopped parsley and toasted pine nuts before serving.
