Ingredients

1 3/4 cups all-purpose flour
1 cup canned pumpkin puree
1/2 cup maple syrup
1/2 cup granulated sugar
1/2 cup vegetable oil
2 large eggs
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground cloves
1/4 tsp ground ginger
1/2 cup chopped pecans (optional)

Instructions

1. Preheat the oven to 350°F (175°C). Grease a 9x5 inch loaf pan and set aside.
2. In a large bowl, combine the flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger. Mix well.
3. In another bowl, whisk together the pumpkin puree, maple syrup, sugar, oil, and eggs until smooth.
4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
5. Fold in the pecans, if using.
6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
7. Bake for about 60-65 minutes, or until a toothpick inserted into the center comes out clean.
8. Allow the bread to cool in the pan for 10 minutes, then remove it to a wire rack to cool completely.

Storage

Store the pumpkin bread in an airtight container at room temperature for up to 3 days, or refrigerate for up to 1 week.

Reheating

To reheat, warm slices in a microwave for 10-15 seconds or in a 350°F oven for about 5 minutes.
